Buckhead Gourmet was organized in 1993 by William C. Morrill. Mr. Morrill, a gourmet chef, wine aficionado and world traveler . In those travels, he savored some of the finest cuisine to be found anywhere. In many cases, friendships with other chefs developed and it allowed him access to kitchens and regional recipes which he brought back with him to serve to his guest and friends.

One obvious fact arose, meat and the preparation of meat were pretty much the same. The difference between ordinary and gourmet were the "sauces" and its preparation. In many cases these world class sauces contained expensive, hard to find ingredients such as black truffles, and took hours or even days to prepare. They also contained a fat base. He saw a niche product; to develop these gourmet sauces with their fine ingredients, without the fat, for easy consumer use. Thus was born, "Classic Chef Sauces." Traditional and classic sauces that you can only find at the finest restaurants. These sauces allow a unique opportunity for the average home cook to enjoy a true gourmet dining experience with minimum preparation, time and effort. All one needs to do is heat the sauce and simmer over low heat and then serve it over your favorite meat dish (red, white or game).

Through constant experimentation and quality control of cooking techniques, we have refined the flavor and quality of four truffle essence sauces. Their formulas have been further developed to produce commercial quantities of consistently similar high quality sauces.

The sauces are fat free and contain only the finest ingredients including a special blend of rare spices, black truffles, and fine wines and brandies. Manufacturing is under FDA guidelines and inspection. No animal products are used in their preparation. Easy to prepare, even microwavable, they have a long shelf life and the truffles even improve the flavor with age.

7 Spice Grilled Shrimp w/Coconut Curry Sauce

Roasted Corn Crab Cake:
16 oz. Lump crab meat
*2 Ears Roasted Corn cut off cob (1 for Crab Cake, and 1 for Tomato Salad)
1 Shallot sautéed
½ cup Mayo
1 Egg
¼ cup grated parmesan cheese
1 Tbs. Red Chile
1 Tbs. Red pepper flakes
1 tsp. Sea Salt
1 tsp. white pepper
Zest of 1 lime plus juice
Chopped Cilantro
Bread Crumbs to tighten mixture…not too much (Toasted if desired)

Combine all ingredients and mix in a bowl.  Let cakes set in the fridge for an hour before cooking.  Sauté in olive oil until browned… Serve hot!  Top with Tomato salad 

Balsamic Tomato Salad
1 Cup diced tomato (seeded)
1 Ear roasted corn (cut off cob)
!/4 Cup diced red onion
2 Tbs. Buckhead Gourmet Balsamic Vinaigrette
Zest of lime plus juice
Chopped Cilantro
S&P to taste

Combine all ingredients and let marinade

Shrimp:
1-lb. whole shrimp 18 – 22 count
1 Tbs. Curry
1 Tbs. Chile
1 Tbs.  Turmeric
! Tbs. Black pepper
1 Tsp. Ginger
1 Tbs. Cumin
1 Tbs. Red pepper flakes
2 Tbs. Canola oil
Zest of 1 lime plus juice
Chopped Cilantro

For Sauce:
1 cup Buckhead Gourmet Coconut Curry Sauce
4 oz unsweetened coconut milk
4 oz Chicken stock
2 Tbs. Olive oil
Lemon 1 stalk diced
1 small shallot sliced thin
1 tsp fresh ginger
Juice of 1 lime
Chopped Cilantro

For shrimp: Combine all ingredients and mix in a bowl.  Let marinade for an hour and grill over medium high heat (5 min). 

For Sauce:  Sauté shallot and ginger in olive oil.  Add remaining ingredients and let simmer on medium heat for 15 minutes.  Serve hot over shrimp with Basmati rice and garnish with lime wedges!
