Coaches Curing Kids Cancer was inspired by Killian Owen, a little boy who had leukemia. It is a great way for sports teams to honor their coach and at the same time make a donation to help find a cure for pediatric cancer. Chef Paul’s Spinach and Frisee Salad with Warm Applewood Smoked Bacon Dressing
Salad Ingredients:
4 cups spinach
1 cup frisee lettuce (white center only)
Dressing Ingredients:
1 tablespoon Dijon mustard
1/2 cup red wine vinegar
1 cup salad oil
1/2 tablespoon sugar
1/2 teaspoon salt
freshly ground white pepper
1/2 tablespoon Worcestershire sauce
8 strips crisply cooked chopped bacon
1 teaspoon light brown sugar
1/2 cup roasted pecan pieces
1/2 cup bleu cheese crumbles
Method:
Place mustard, salt, pepper, and vinegar in a blender. Add the oil slowly at medium speed to emulsify.
In a skillet, warn the chopped bacon add brown sugar and the dressing. When the dressing is hot, pour over the salad greens and toss gently. Add freshly ground pepper, bleu cheese, and pecans.

| Ivan Ljubicic has forever claimed for himself a spot in the Huddled Masses Hall of Fame by leading Croatia to the 2005 Davis Cup title. Ljubicic had a monstrous Davis Cup season by going 11-1 (all live rubbers,) falling only to Dominik Hrbaty in five sets in the forth rubber of this year’s final. This is what makes Davis Cup the greatest team event in sports today: Croatia winning one of tennis’s greatest prizes with virtually a two man team, Ljubicic and Mario Ancic. For most of the year, it was just Ljubicic as Ancic did not win a live rubber singles match until the deciding fifth match of the finial. Now if the United States can somehow find the enthusiasm that small countries like Croatia and Slovakia show for the cup, we might once again hoist that same cup above our heads. |
